Q001.什麼叫「真空充氮」?
A001.我們都知道,一般食品如果沒有好好密封保存,跟空氣接觸久了就會被空氣中的氧氣給「氧化」,但不是每個人都知道「氧化」對於食品有多嚴重的影響。大家應該都有經驗:吃到一半的蘋果放著放著竟然就變色了!除了顏色的變化之外,您知道有些食品的營養成分也會因為氧化而變質嗎?
 
您是不是遇過這樣的經驗:打開密封的食品包裝,卻聞到一股難聞的味道,但明明是未開封的產品啊?
 
某些不新鮮的食品會散發一種油耗味,不但難聞,食品的味道也變得難以下嚥。這就是因為食品裡的不飽和脂肪酸被氧化了,經過一連串化學反應,產生了所謂的「過氧化物」,這個過程就是「酸敗」。酸敗產生的其他物質不但會破壞食品中的維生素,這些被吃下的過氧化物還會繼續氧化,對於人體的害處不言而喻。
 
為了避免氧化,一些食品會添加維生素E之類的「抗氧化劑」,抗氧化劑又有天然及合成兩種,天然的抗氧化劑時效較短,合成的時效較長。不過盡管添加了抗氧化劑,還是無法阻止氧氣的侵襲;一般的包裝又無法避免含有空氣,這不就表示當產品在開封之前,其實是在商店的貨架上慢慢氧化、變得不新鮮嗎!?
 
那麼,我們有什麼辦法能避免吃到被氧化的食品呢??
 
這時候就出現了「真空充氮」技術,利用這種技術,我們先將包裝裡的空氣抽出來,再用屬於惰性氣體、不會與食品成份反應的「氮氣」充入包裝內,最後密封起來,這樣在食品開封前,就能確認食品的鮮度是跟製造的那天一樣新鮮!也就不用擔心花錢又吃到不新鮮的產品了~
Q002.『醬』的由來和歷史。

「醬」是「醯」和「醢」的總稱,起源於中國。根據歷史記載,於西元3000年前之周朝就開始生產醬,到春秋戰國時期就已成為不可缺少的調味品,論語鄉黨篇中也曾提到:不得其醬不食。最初出現的醬是以肉類為原料,一般稱為肉醬,古籍中也有稱為肉醢或醢醬,之後隨著農業的發展,出現以鼓物及豆類為原料,且得到迅速發展,尤其以大豆為原料的豆醬更是發展迅速。目前的醬類趨勢則走向健康方便。
Sauce is composed of acid and salt, originating from China. Sauce was an indispensable seasoning about 3000 BC. At the beginning, it was made from meat, so it is also called as meat sauce. With the development of agriculture, soybean and cereals were used as its material. The development of soybean sauce is particularly quick. At present, health and convenience are two important factors for the sauce.
Q003.如何分辨醬料的好壞?

    Without bad oily smell.
2. 無發霉、酸敗、膨罐之現象。  
    No mildew, decay or bulged can.
3. 標示要清楚。                               
    Clear identification or marking.
Q004.一般調味醬料之保存方式?
How to preserve sauce?
A004.
1. 開罐前應避免陽光直射。
    Direct sun shall be avoided before opening.
2. 開罐後將罐口擦拭乾淨,密封後冷藏,並且儘快使用完。
    Bottle mouth shall be duly cleaned after opening. Store
    in the refrigerator of sealing, and use it up as soon as possible.

Q009.請問貴公司的收款都是如何運作呢?

A009.依公司規定,對於新客戶收款方式為「下貨收現」,對於配合三個月以上互動良好之客戶,給予「月結、30天票期」之優惠。

Q010.請問貴公司的「黑胡椒醬」與「黑胡椒牛排醬」有什麼不同?

A010.黑胡椒醬其濃稠度較高,是針對一般炒肉絲、肉片、青菜時,肉品青菜本身會釋放出水來之特性而調配,適合調理烹煮時使用。黑胡椒牛排醬則稠密度較低,是針對直接沾食使用而設計的調味沾醬。
Due to high condensation, when Black Pepper Sauce is used for frying shredded meat, sliced meat and vegetable, meat or vegetable can release moisture. It is suitable for cooking. Black Pepper Beef Steak Sauce has lower condensation, so it is a sauce designed for direct use or contact with food.
